Hey, I have some frozen blueberries! I could whip up this Easy Low Carb Blueberry Cobbler. If you’re not familiar with Xanthan Gum, it’s there to thicken this up. And I’d probably use Swerve instead of packet sweeteners, but then again–I use Swerve in about everything! | |
These Chicken and Zucchini Poppers look amazing! I’d want them fried for sure to give a little extra crunch to the outside. And I’ll bet the zucchini grating would go super quick with a drum grater–I love mine! |

 I totally want to award an honorable mention to this delicious Keto Chocolate Roll Cake. It missed the top 10 lineup by less than 50 “votes” – and I happen to know from personal experience it’s delicious! It was one I wanted to try from the moment I saw it; I even ordered Psyllium Husk Powder especially for it, and it was the final deciding factor in buying my now-beloved baking mats. I wanted to make it that bad. And it wasn’t a disappointment. So I’m offering it up an honorable mention, as a bonus roundup recipe for you this week.Â
