Lemon Butter Chicken, Bacon Popper Egg Cups & Cheesecake Mousse: Best Low Carb Recipe Roundup, November 2015

Lemon Butter chicken? Yes, and much more!

It’s been a minute since I did a top recipes roundup, so I thought I’d bring the latest ones to you. I love checking to see what y’all are most interested in and the theme I’m noticing is quick and easy but without compromising on flavor.

These are the recipes that have the most clicks, likes, shares and pins from last week on our Facebook page. They were all popular but I have to say, the Lemon Butter Chicken was a standout, hands down the most popular.

Low Carb Lemon Butter Chicken – Runaway winner this past week! I think the super quick prep time was a bonus for a lot of folks. | Pin

Easy Garlic Butter Roasted Mushrooms – She recommends using a cast iron skillet in the oven for these, but it’s optional. The ability to go straight from stovetop to oven is one of the things I love most about cast iron, though. | Pin

Jalapeno Popper Egg Cups – I love these flavor and it’s so simple. Just wrapping the bacon in a muffin pan. | Pin

Cheesy Loaded Mashed “Potatoes” Love anything you can make in and slow cooker (because I love my a slow cooker)! | Pin

Mexican Beef and Zucchini – This one is just my speed. You can cut up your own tomatoes or just grab a can of Rotel if you’re strapped for time. | Pin

Low Carb Zucchini Cheese Wedges – I want to try these! Not sure if I have parchment paper in the cabinet, probably do. But if not, baking mats should work just fine. | Pin

Grilled Lemon Garlic Zucchini – Something like this is just my speed. Super simple, super fast, super nutritious and tastes great to boot. What’s not to love? | Pin

Cheesecake Mousse – I’ve mixed up similar concoctions myself and they are wonderful. Definitely going on the “Try Me” list! | Pin

Low Carb Lime Coconut Cheesecake – These are not my personal favorite flavors, but that doesn’t mean I cannot appreciate how awesome it looks if you dig that combo. Note about the Xylitol: please be super careful with this if you have pets! It’s very toxic to dogs and cats. | Pin

Stuffed Chicken Parmesan – I love cheesy, wonderful goodness stuffed into chicken, dang it! | Pin

Have you tried any of these? How’d it work out for you?
