Low Carb Chicken Fajita Stuffed Peppers – The “rice” for these stuffed peppers is made in a blender or food processor, out of cauliflower.

Cheddar and Pepper Stuffed Bacon Wrapped Chicken – These look great, and not too hard either. She suggests a meat thermometer to check the internal temperature, making sure the chicken is completely cooked.
