You folks trying to manage a low carb lifestyle with little ones about have my total respect. I’ve been there, man.

In my early twenties, I had THREE littles under the age of five! What’s more, my husband and I both worked full time.

I’ll never forget dragging home after work, running on nothing but steam to collapse onto the couch. After a quick breather, my husband and I would scan one another’s faces, trying to decide who was the least exhausted. Whomever had the most energy was elected to find something–anything–to feed the kids. So yeah, I know how hard it can be.

If you’ve got littles about, maybe this drop-dead simple, kid-friendly recipe idea can help make a tired weeknight easier.

But if the kids are big enough to need help with math homework, I’m not your gal! 😀 You’d be far better off reaching out to today’s sponsor.

Pro tip: You can always make the chaffles ahead of time, and either toss them in the fridge for a few days or just freeze them to make this quick recipe even quicker. I won’t mind if you don’t thank me for this idea, though. You’re probably too tired!

Using the word “casserole” loosely. It’s pizza chaffles scrunched together for cooking here!

☕ Notes About This Thing

  • Please consider nutritionals an estimate, based on what you might use in terms of chaffles, sauce, cheese and pizza toppings. Basically all of it is ballpark, because it’s going to vary from mine to yours. I’m also using the numbers for regular spaghetti sauce to make sure I don’t underestimate what you’ve got on hand.
  • Bottom line: I’m not one to tell anybody how many pepperonis are “enough” for goodness sakes! That’s more an existential question than a low carb recipe question…
